DELIGHTFUL PORTOBELLO SANDWHICH
Delicious and Healthy
Ingredients: bagette, pint of mushrooms, mozarella cheese, fresh basil, tomato, and red wine.
Clean and slice a pint of button or baby portabella mushrooms. In a skillet put the mushrooms, add a bottle of red wine (nothing too fancy) and two cups of vegetable broth. Bring to a gentle simmer over medium heat. It takes a while for the liquid to reduce, so be patient. Meanwhile, cut some mozarella cheese and a tomato into slices and wash several fresh basil leaves. Slice bagette lengthwise, drizzle with olive oil and toast in the oven. Once the mushrooms are ready, top the bagette with mushrooms, cheese, basil, tomato and enjoy!

This week we are going outside.
Spring is here and the weather is getting too good to be indoors all the time. Let’s get outside and go for a run!
If you are a beginner here is a good place to start:
Begin with a run walk combination based on time.
Jog/run for 1 minute and walk for 2 minutes. Repeat for a total of 10 minute.
Follow this patter for a total of three runs per week with a day of rest in between.
Increase your run time every two weeks by 30 seconds.
Once you reach 2 minutes of consecutive running, then begin to reduce your walking time by 30 seconds every two weeks, but no lower than 1 minute.
Build it up to 5 minutes of running and 1 minute of walking until you reach 30 minutes total time on your feet. After which you can focus on just running without having to take the rest breaks.
There are great benefits to running outdoors. So go out and kick some asphalt.
